GRAPEFRUIT AND MOZZARELLA DI BUFALA SALAD

Nothing compares to the creaminess and quality of Zandam Mozzarella di Bufala. Pairing it with the zesty zing of seasonal grapefruit is a match made in heaven. You can swap the grapefruit in this recipe with oranges, but remember to balance the added sweetness with some acidity. Pickled beetroot can also work, just be careful to keep the beetroot pigment from bleeding into the creamy white cheese and ruining your presentation.

INGREDIENTS/THE WHAT:

FOR THE HOT HONEY

150g pure honey

2 tablespoons lemon Juice

pinch of dried ginger

pinch of dried coriander

freshly ground black pepper

FOR THE SALAD

2 x 120g tubs of Zandam Mozzarella di Bufala

2 large grapefruits 

80g wild rocket

a handful of nuts
(cashews work well, but sunflower seeds and sesame can also be substituted. Or any other nuts of your choice)

salt and black pepper to season

METHOD/THE HOW:

PREPARING THE SALAD

1. Rince the rocket well and arrange it on a large, flat salad plate.

2. Cut out the grapefruit segments and arrange them on top of the rocket leaves. Be sure to remove all of the bitter pith. (The white parts.)

3. Tear the Mozzarella di Bufala into chunks and arrange between the grapefruit segments.

4. roughly chop the nuts and scatter them on top. If the nuts are raw, toast them in a dry pan or hot oven until they are golden brown.

MAKING THE HOT HONEY DRIZZLE

1. Slowly heat the honey in a small pot.
2. Add the lemon juice, ginger, coriander and black pepper.

TO FINISH THE DISH

Drizzle the Hot Honey over your salad and enjoy!

TOP TIP

If you want to give your Hot Honey a savoury twist, you can add a bit of fresh garlic. If you feel spicy is more your style, add fresh chilli or some chilli flakes and a dash of cinnamon to turn up the heat.

ZANDAM MOZZARELLA DI BUFALA MARINATED WITH ORANGE AND RED ONION SERVED WITH A CRUNCHY WINTER SALAD AND SOURDOUGH CROSTINI

Fresh and full of flavour.

This recipe is quick and easy to make, perfect in winter when citrus is at it’s best, as a starter or light lunch for 4-6 guests.

INGREDIENTS/THE WHAT:

2 x 120g Zandam Mozzarella di Bufala

FOR THE RED ONION DRESSING

½ a medium red onion, peeled and finely sliced

50 ml red wine vinegar

Pinch of sugar

Ground black pepper & salt for seasoning

1 sprig fresh thyme

1 orange – grated zest & juice

+- 40 ml olive oil

FOR THE SOURDOUGH TOAST

1 clove garlic, cut in half

4 slices sourdough (or other good bread)

FOR THE SALAD

4 radishes, sliced

½ cucumber, peeled & sliced

orange slices from 1 orange

1 handful fresh celery & parsley leaves

80g lettuce leaves

METHOD/THE HOW:

MAKE THE RED ONION DRESSING:

  1. Place the sliced onion into a bowl
  2. Bring the red wine vinegar to a boil together with the sugar, pinch of salt & ground black pepper
  3. Remove from the heat & pour the vinegar over the sliced onion immediately
  4. Add the orange juice, zest, olive oil & thyme leaves
  5. Allow to stand at room temperature for an hour.

MAKE THE SALAD:

  1. Remove the cheese from the fridge about an hour before serving – it should not be served cold
  2. About 20 minutes before serving, combine the radishes, cucumber & orange slices in a bowl & gently toss through with some of the red onion and orange dressing
  3. Drain the mozzarella & cut a deep cross into the top of each cheese
  4. Season generously with salt & pepper
  5. Arrange the lettuce, salad ingredients & cheese on a serving platter.
  6. Drizzle the dressing over the cheese.

TO MAKE THE SOURDOUGH TOAST

  1. Toast the slices of bread & rub all over with the raw cut garlic.
  2. Drizzle a little olive oil onto the toast & serve straight away while still warm with the salad

MOZZARELLA DI BUFALA AND SHRIMP PASTA – SADIE’S BUBBLE OF YUM

INGREDIENTS/THE WHAT:

500g shrimp, peeled and deveined

3 tablespoons olive oil

3 garlic cloves, peeled, rinsed and chopped

½ teaspoon dried italian herbs

1 teaspoon ground green chillie

2 teaspoons Fish and Prawn spice

Salt and pepper to taste

1 packet tagliatelle, boiled in salted water until al dente (keep a cup of the pasta water)c250ml Cream

1 tub Zandam Mozzarella di Bufala

Fresh coriander and dried chilli to garnish

METHOD/THE HOW:

  1. .In a pot, heat the olive oil on medium heat then add the garlic and chillie.
  2. Add the shrimp, fish and prawn spice, salt and pepper and herbs, stir and allow to braise until almost fully cooked then add the cream and stir to combine.
  3. Add the pasta and pasta water, stir and while cooking on low heat, break half of the mozzarella, stir and allow to melt.
  4. Serve warm, garnished with the remainder of the mozzarella, coriander and dried chilli.

ZANDAM MOZZARELLA DI BUFALA AND ROASTED NECTARINE SALAD

When the temperatures rise outside and it is the season for nectarines, this is a lovely zesty Summer salad that will get your taste buds zinging.

INGREDIENTS/THE WHAT:

Zandam Mozzarella di Bufala (you don’t need much, 100g is more than enough)

Four nectarines (white flesh varietal works really well with the gentle flavour of the Mozzarella), sliced into six pieces each, length-wise

Ciabatta bread to roast for the croutons, two slices are enough

Baby spinach leaves (200g)

One red chilli, finely diced (or chilli flakes if you can’t find fresh chillies)

One lemon (zested and juiced)

Fresh mint (half a cup, finely chopped)

Good quality olive oil

Salt and pepper to taste

METHOD/THE HOW:

  1. Heat a griddle pan over high heat, adding some olive oil. Once hot, add the nectarines and roast until slightly charred and golden (usually about two minutes on each side).
  2. Rip your ciabatta into chunks and put them a oven roasting pan. Put them under a grill in the oven until toasted.
  3.  For the dressing use three tablespoons of olive oil and one and a half tablespoons of lemon juice. Mix together, season with salt and pepper and add the finely chopped chilli and mint.
  4. Put the baby spinach leaves on a serving plate. Arrange the nectarine, croutons and torn Zandam Mozzarella di Bufala on a plate.
  5. Drizzle the dressing on top and enjoy!
