This quick but comforting treat is one of Tino’s favourite weekday meals. Easy to make, with the nutritious benefits of handfuls of fresh spinach, it is the perfect way to celebrate our delicious Zandam Ricotta. 

Keep your dumplings small and enjoy them with a glass of your favourite wine. If you add a classic Caprese salad with our Zandam Fior di Latte or Mozzarella di Bufala, you’ll have a delicious, authentically Italian meal, pronto!

INGREDIENTS/THE WHAT:

400g Zandam Ricotta

400g Baby Spinach

100g Zandam Local Parmesan

200g Plain Flour

2 Eggs

Pinch of Nutmeg (Did you know that spinach loves nutmeg?)

METHOD/THE HOW:

  1. Wilt your spinach lightly and then blend it into a pulp with a stick blender.
  2. Add the flour, egg and Zandam Ricotta to the spinach and shape it into a dough, then form little dumplings in the same way you would when you make gnocchi.
  3. Cook the dumplings by quickly boiling them in salted water. The moment they float to the top, they are done. (This doesn’t take long at all.)

    4. You can serve them with any sauce. We love them fried up in a bit of butter and sage, drizzled with olive oil and served with Mozzarella di Bufala, or even drenched in Nonno Matteo’s favourite Napolitana sauce.

ROASTED FIGS WITH HONEY AND ZANDAM RICOTTA

If you are craving a wonderful combo of salty and sweet, these easy-to-make roasted figs with honey and Zandam ricotta are just the ticket.

The taste will wow the tastebuds after the rich colours and smells have wowed all the other senses. Wonderful served as a decadent appetiser or as the centrepiece on a cheese board.

INGREDIENTS/THE WHAT:

Fresh, ripe figs.

Zandam Ricotta (you only need a little, so have another Ricotta recipe ready to use the rest – we recommend any of our Ricotta cake recipes.)

Organic honey

Pecan nuts

Marjoram

Salk flakes

Peppercorns

METHOD/THE HOW:

  1. Cut off the stems make a cut in the top of each fig. Cut about three quarters of the way through.
  2. Stuff the figs with some ZANDAM Ricotta using a teaspoon and sprinkle chopped pecans on top. You can also use walnuts.
  3. Drizzle with honey.
  4. Add salt and freshly ground black pepper to taste.
  5. Sprinkle shredded marjoram on top (sage also works well).
  6. Bake in a pre-heated oven (180°C) until the figs are soft and start releasing juices.
  7. Serve warm (our preference) or cold.

IOLANDA’S VERY OWN RICOTTA CAKE

 

If you ask any one of the Delle Donne siblings about their food memories from growing up, this cake inevitably features. Iolanda would bake it for any and all occasions. It was such a crowd pleaser that guests would start requesting it. Even though it is a treasured family recipe, Iolanda was never selfish with it. She would gladly tell people how to make it. She, herself, however, never wrote it down.
This cake is perfect as a light dessert, or a tea-time treat. As long as you share it with someone you care for.  It’s quick to make, and the perfect way to bring Italian hospitality into your life, the Iolanda way.

INGREDIENTS/THE WHAT:

▪ two tubs of 250ml Zandam Ricotta

▪ 4 eggs (use all four yolks, only two whites stiffly beaten)

▪ 1 cup of sugar

▪ 2 cups of cake flour

▪ 1 cup of cake mix fruit

▪ 5ml vanilla essence

▪ pinch of salt

▪ rind of one lemon

METHOD/THE HOW:

1. Pre-heat the oven to 180 degrees Celcius.
2. Prepare a springform pan, greasing the sides well and lining the bottom with baking paper.
3. Separate the eggs, keeping two of the whites to the side (you can freeze it to use at another time).
4. Mix the ricotta, egg yolks, sugar, flour, cake mix fruit, vanilla essence and salt together.
5. Mix in the rind.
6. Beat the egg whites until stiff and gently fold into the cheese mixture just before baking.
7. Bake at 170 degrees Celcius for 50 minutes to an hour.
8. Leave to cool slightly before removing the form the pan.

Dust with powdered sugar and enjoy!

 

TOP TIP

Keep an eye on the cake during the last couple of minutes. You don’t want the top and sides to burn.
Enjoy warm or cold.

VYGIE RICOTTA AND ALMOND CAKE

This almond and ricotta cake is a real crowd pleaser at Vygie, a lovely new eating experience at Oaklands Farm outside Wellington. The recipe was created by Rose Gelderblom Waddilove using local produce for their farm dining room and they love to serve it at the end of a long lunch or with afternoon tea.

INGREDIENTS/THE WHAT:

120g salted butter

275g brown sugar

1 tsp vanilla extract

A few drops of almond extract

Zest of two cape rough skin lemons

4 free range eggs separated

240g ground almonds

300g Zandam ricotta

Icing sugar for dusting

METHOD/THE HOW:

  1. Butter a 22cm springform cake tin and preheat oven to 160ºC.
  2. Cream butter, sugar, vanilla, almond extract and lemon zest until pale and fluffy.
  3. Add egg yolks and beat on high speed until well combined.
  4. Add ground almonds and beat to combine.
  5. Beat egg whites to stiff peaks and fold into almond mixture.
  6. Pour into cake tin and bake for about 50 minutes until firmed up in the centre and browned on top.
  7. Allow to cool and dust with icing sugar.
  8. Great served with thick cream or a cup of herbal tea.

OLIVE, SWISS CHARD AND ZANDAM RICOTTA TART

This delicious ricotta tart is a creation from Chef Garth Bedford who heads the team at The Kraal at Joostenberg. A simple recipe that can be mastered by anyone, Chef urges you to follow the steps for making the dough carefully.

The original recipe calls for salted, dried olives, but you can use your favourite kind, just make sure that the brine is properly drained, and seasoning is adjusted to taste depending on how salty they are.

Makes enough for 6 as a light meal served with a salad on the side.

INGREDIENTS/THE WHAT:

For the dough

200g flour

+-70ml warm water

40ml olive oil

½ tsp salt

For the filling

200g Swiss chard or spinach, washed & dried. If the Swiss chard stems are thick, separate them from the leaves & chop roughly.

1 med onion peeled and finely chopped

1 clove garlic finely chopped

A little olive oil for frying

¼ tsp thyme leaves

Salt & black pepper for seasoning

1 egg

100ml cream

Pinch of nutmeg

100g pitted olives

For the topping

+- 200 g Zandam Ricotta cheese

Grated zest of 1 lemon

Olive oil, fresh origanum leaves, salt & pepper for seasoning   

METHOD/THE HOW:

Make the dough

  1. This dough needs a very light touch – do not over-work or knead at all.
  2. Simply put the flour, water, oil & salt in a bowl, combine them gently by hand to form a loose ball.
  3. Set aside to rest at room temperature for an hour.

Make the filling

  1. At medium heat, sauté the onion, garlic & chopped Swiss chard stalks together in frying pan with a little olive oil until soft.
  2. Add the thyme & Swiss chard leaves to the pan & cook further until the leaves are wilted.
  3. Season with salt & pepper. Taste & add more seasoning if needed. Remove from heat.
  4. Whisk the egg & cream, a pinch of salt, pepper & nutmeg together in a bowl.
  5. Add into the pan with the Swiss chard mixture & set aside.

Bake the tartHeat the oven to 190 C. You will need a 24cm diam round tart dish with +- 3cm raised edges (or similar capacity).

  1. Lightly brush the tart dish base & sides with oil. Press the dough by hand to flatten it & press into the tart dish as evenly as possible.
  2. Make sure that the dough comes up the edges & raised sides of the dish. Bake blind for 35 min at 190 C until lightly browned & cooked. (See cook’s notes on how to bake blind.)
  3. Fill the tart with the Swiss chard mixture & place an even layer of the olives on top.
  4. Bake for 25 – 30 minutes. The tart should be lightly browned, set but still soft, not dry.

Add the ricotta

  1. Strain the cheese to remove any excess liquid.
  2. Crumble over the warm tart & season generously with grated lemon zest, a drizzle of olive oil & scattered origanum leaves.
  3. Serve straight away

CHEF’S NOTES

How to blind bake a tart: Once you’ve lined the tart dish with the dough, prick the base with a fork. Cover the whole surface of dough, including the raised edges, with baking paper. Fill the tart dish by pouring dry beans, lentils or uncooked rice onto the paper, pressing down into the corners. Follow baking instructions. Once dough is lightly browned, remove the tart from the oven & carefully remove the beans, rice or lentils, & continue with the tart filling process.

CHOCOLATE RICOTTA POTS – SADIE’S BUBBLE OF YUM

INGREDIENTS/THE WHAT:

200g good quality chocolate, roughly chopped

200g Zandam Ricotta Cheese

120g cream

3 eggs, separated

2 tablespoons caster sugar

1 tablespoon cocoa powder, sifted (and extra to cover the ramekins)

1 squeeze of vanilla paste

Pinch of salt

METHOD/THE HOW:

  1. Preheat the oven to 170C (thermofan) and prepare the ramekins, by greasing it generously, topping it with a layer of cocoa powder.
  2. In a bain marie or a heatproof bowl over simmering water, melt the chocolate with the ricotta and cream, whisk to combine and set aside to cool.
  3. In a separate bowl whisk the egg whites for 30 seconds until frothy then gradually add the sugar and whisk until glossy peaks form.
  4. Add the egg yolks, sifted cocoa powder, vanilla and salt to the chocolate ricotta mixture and mix to combine.
  5. Fold the eggs whites into the batter with a metal spoon, be careful not to overmix.
  6. Pour the batter into the ramekins, filling it until just below the rim.
  7. Bake in the preheated oven for 10 minutes then top with a dusting of cocoa and serve warm with a scoop of your favourite ice cream.

VARIATION: Mini Chocolate Ricotta Tarts

This filling can easily be used in a mini tart and is quite simple to prepare.

ADDITIONAL INGREDIENTS

100g good quality chocolate, roughly chopped

1 teaspoon coconut oil

250g phyllo pastry, roughly cut into 9cm squares

50g butter, melted

METHOD/THE HOW:

  1. Preheat the oven to 180C. In a greased muffin tray, roughly layer 4 squares of phyllo pastry on top of each other in each of the muffin cups, each layer generously brushed with melted butter.
