ZANDAM MOZZARELLA IN CARROZZA

Deep-fried Carrozza toast with Zandam Mozzarella
Yes. A deep fried cheese toasty… Need we say more? 

We love the crispy crunch of the fried bread, and the salty cheesy crumb coating is perfect with the luxurious mild and creamy taste of our classic Zandam Mozarella. Not to mention the post-worthy cheesepull this toaosty delivers…

INGREDIENTS/THE WHAT:

  • 140g ZANDAM MOZZARELLA cut into 5mm thick slices
  • 50ml mayonnaise
  • 4 slices white sandwich bread
  • 2 large eggs
  • 20g ZANDAM LOCAL PARMESAN
  • 200ml panko breadcrumbs or store-bought plain dried breadcrumbs
  • 1ml salt
  • 1ml freshly ground black pepper
  • oil for frying

METHOD/THE HOW:

  1. Spread mayonnaise on one side of each slice of bread.
  2. Divide cheese in an even layer among 2 bread slices.
  3. Then top with the remaining bread slices, mayonnaise side down.
  4. Use a serrated knife to neatly cut off crusts of bread to form a uniform square.
  5. In a shallow bowl, whisk eggs and Pecorino together to combine.
  6. In a second shallow bowl, combine breadcrumbs, salt, and pepper.
  7. Working with 1 sandwich at a time, dip each sandwich on all sides in the egg mixture, letting excess egg drip back into bowl.
  8. Coat in the bread crumb mixture, making sure the entire sandwich is evenly coated with crumbs.
  9. Transfer the sandwich to a plate and repeat the dredging process with the remaining sandwich.
  10. Refrigerate sandwiches for about 20 minutes.
  11. Line a large plate with paper towels; set aside.
  12. Add oil to a pan until it measures 2.5cm and heat over medium-high heat.
  13. Use a spatula and carefully transfer both sandwiches to the hot oil and fry until deep golden brown on the bottom, adjusting heat as needed for about 2 minutes.
  14. Use the spatula and a fork to flip the sandwiches and continue to fry until deep golden brown on the second side, about 2 more minutes.
  15. Transfer sandwiches to the prepared paper towel-lined plate and let sit for 90 seconds.
  16. Transfer to a cutting board and use a serrated knife to cut halfway through the bread, stopping right before you hit the cheese.
  17. Flip the sandwich over and again cut through bread, stopping before slicing through the cheese.
  18. Slowly pull sandwich halves apart for an impressive cheese pull.

THE BEST PIZZA DOUGH WITH ZANDAM MOZZARELLA

According to Tino, the secret to great pizza lies in the dough, the tomato you put on the base before the rest of the ingredients, and “molto importante”, the best Mozzarella from Zandam! Even though he calls this “quick dough” – it still has to prove and rest for between 3 and 4 hours.

INGREDIENTS/THE WHAT:

FOR THE DOUGH 

1kg stoneground bread flour

650g lukewarm water

30g olive oil

10g yeast

20g salt

FOR THE TOMATO BASE

1 1⁄2 tin whole peeled or crushed tomatoes

1 small tin tomato paste

5 cloves garlic

1 small onion

origanum, salt and pepper to taste

METHOD/THE HOW:

FOR THE DOUGH

  1. Mix all the ingredients together and knead till it forms a soft elastic dough.
  2. Cover the dough and let it prove/rise until it has doubled in volume.
  3. Portion the dough into 8 balls and let them prove again.

FOR THE TOMATO BASE

  1. Blitz the tomatoes, paste, garlic and onion together and then season to taste with the origanum, salt and pepper.
  2. You can choose whether you want to cook your base or not.

ASSEMBLE YOUR PIZZA

  1. Roll out your pizza bases on a work surface lightly sprinkled with flour.
  2. If you have a wood-fired oven properly heated, the baking process will only take a couple of minutes.
  3. In the oven, pre-bake the bases for a couple of minutes, take out, spread the tomato mixture on each base and add grated Zandam Mozzarella.
  4. What goes on top of the Mozzarella is up to you, but Tino’s favourite is Rocket and Prosciutto – added once the pizza comes out of the oven.

TOP TIP

He knows it’s bad for business, but Tino cautions against putting too much Mozzarella on a pizza. Buon appetito!
